The recipe is truly authentic, originating in India and passed on by an old native of Delhi in the mid 1970’s, the recipe has remained within the family since then, and hardly ever shared, so enjoy!
Ingredients
1 ounce lard or dripping
1 small onion finely chopped
1 apple, peeled, quartered and finely chopped
2 chicken breasts (ideally on the bone but fillets will do)
½ ounce curry powder (strength according to your taste) Buy Online
1 ounce flour Buy Online
½ pint good chicken stock
1 ounce sultanas Buy Online
1 tomato, peeled and quartered
½ teaspoon mango chutney or spiced fruit chutney Buy Online
1 dessert spoon lemon juice
Pinch of chilli powder (if desired) Buy Online
Method
Lard goes in pan, melts, throw in the onions and fry for 3 minutes, then add the apple and fry till golden and soft
Sprinkle in your curry powder and flour and fry thoroughly, a paste will form, if so no worries!
Gradually add you stock and slowly bring to the boil
Once done, add everything else
Simmer on the hob for 90 minutes or cook in the oven for 90 minutes at 160 degrees
At the end of cooking add in 1 teaspoon of Garamasala and stir, then serve with either rice, naan, or both!
